Summer Salad 2

This makes a great, healthy side or a quick lunch.

2 boiled ears of corn, with the kernels removed
half pint of cherry tomatoes, sliced in half
1 tbsp cilantro
1 tbsp olive oil
1 tsp balsamic vinegar
salt/pepper to taste

Easy pecan pie

1 cup dark corn syrup
3 eggs, slightly beaten
1 cup sugar
2 tbsp. butter, melted
1 tsp vanilla
1 1/4 cup pecans
1 unbaked 9-inch deep dish pie crust

Mix all ingredients except pecans together. Then mix in pecans. Pour into pie crust and bake for about one hour at 350 degrees. Let cool before slicing (this is the toughest part of all).
